I am a new UAF faculty member located in Kodiak. My interests are focused on protein chemistry and how it relates to protein functionality. I also have a broad interest in food science as a whole. My role as a UAF faculty member is geared towards seafood science in terms of chemistry, processing, and utilization. In my previous field of research I worked on identifying critical factors influencing cereal grain functionality and nutritional quality through various chemical and analytical techniques.
