Deep Bruise: Imaging Technologies for Detecting Deep Bruising in Salmon

 

Problem: Bruising is an important quality defect, particularly in silver salmon but in other wild salmon as well. Bruising reduces the value of fish fillets and can be an impediment to the sale of Alaskan harvested wild salmon on the world market. Bruising is notoriously difficult to detect before a fish is filleted. The industry would embrace a non-invasive technology that could reliably detect deep bruising.


Solution & Approach: This project is ongoing. In collaboration with food scientists at Washington State University and DSquared Development, we have demonstrated that a new noninvasive measurement technique will detect muscle bruising in silver salmon with up to 83% accuracy. These results demonstrated that short wavelength near infrared can be used to grade fish. We are currently improving the accuracy of this method allowing us to move the technology closer to commercial application.
